Born in 1977, Matteo Baronetto is a calm, reflective, sometimes disarming chef. His very personal, distinctive cuisine, characterized by balance, intuition, and talent in the realization of the dishes, earned him international appreciation from culinary critics.

Baronetto was a disciple of Marchesi and for many years the right-hand man of Cracco. He has been leading Del Cambio’s kitchen since the first day of the new course and just six months after the reopening won the Michelin star.

Disruptive, experimental, and above all well-read, Baronetto is an advocate of the raw materials as the heart of every creation. His Piedmontese roots which have never ceased to influence him guide his rediscovery of tradition, while a solid technique, combined with surprising creative intuitions, leads him to create dishes that are difficult to label.

In a place so rich in history, his ambition is to create, even in the kitchen, “something that lasts over time.”
