LO CHEF

Diego Giglio

Born in 1979, he is an attentive, thoughtful and rational chef. A profound connoisseur of the territory and raw materials, he has trained in some of the most prestigious kitchens on the national scene and, guided by his Piedmontese roots, he expresses his thoughts through a proposal that pays homage to Del Cambio, respecting its historical identity and enhancing its link with the place where it is located. The dishes speak more than his words: the essence of a refined language, capable of looking to the past to tell the present, bringing up to date that Piedmontese gastronomic culture, recognised throughout the world.

History

Del Cambio restaurant is revealed as a "timeless" place, because since October 5, 1757, is renewed cyclically, but remaining faithful to itself. Del Cambio is a place of worship, historically frequented by lovers of beauty and good food.

The
Chef's Table

An off-paper menu that, through dialogue with the Chef, creates an intimate bond between the guest and the kitchen.

DEL CAMBIO

Del Cambio's
Cellars

Del Cambio's cellars are even older than the venue. They date back to the seventeenth century and constitute not only the material but also the "spiritual" foundations of the restaurant.
